Lentil Soup

Ingredients

    Cup Bayara Red Lentils

  • 1/2

    Cup Bayara Bulgur

  • 1

    Tbsp. Bayara Cumin Powder

  • 1

    Tsp. Bayara Turmeric Powder

  • 1

    Tsp. Bayara Paprika Powder

  • 1

    Tbsp. Bayara Dried Mint Leaves

  • 1

    Pinch Bayara Salt

  • 2

    Tbsp. Tomato Paste

  • 1/4

    Olive oil

  • 1

    Cup Onion(Finely Chopped)

  • 2

    Cubes Vegetable stock

  • 1/2

    Squeezed Lemon

  • 1

    Parsley for garnish

Lentil Soup

  • 1. In a pot over medium heat, sauté the chopped onions with olive oil until lightly browned.
  • 2. Add lentils and stir with onions for a minute or two (roasting lentils before cooking gives them extra flavor).
  • 3. Add vegetable stock and 6 cups of water (or you can add 6 cups of homemade chicken stock).
  • 4. Cover the pot and leave it under low-medium heat for about an hour or until lentils are very tender and creamy.
  • 5. Now after having them cooked, add cumin, turmeric, salt to taste, and juice of half a lemon.
  • 6. Blend the whole mixture using an electric blender to make a coherent and creamier soup.
  • 7. Garnish with parsley and serve hot.
